Pancetta
5 lbs Pork belly
6 cloves garlic
60g Basic Cure from “Charcuterie”
26g Brown sugar (2T)
20g black pepper (4T)
10g Juniper berries crushed (2T)
4 bay leaves crumbled
4g (1 t) freshly grated nutmeg
4-5 sprigs fresh thyme
2 sprigs rosemary
1 teaspoon crushed coriander seed
Cure for 5-7 days then coat with 20g black pepper and roll and dry
