Oatmeal Raisin Cookies

Preheat oven to 350˚

Cream together:

1 cup butter (112g) (softened to 68˚)

1 ½ cups (300g) firmly packed brown sugar
Then beat in:

2 large eggs (68˚)

1 teaspoon vanilla
Then stir in:

1 ½ teaspoons apple pie spice

1 teaspoon salt

2 teaspoons baking soda

1 ¾ cups (260g) whole wheat flour

2 1/3 cups (250g) regular rolled oats
Lastly stir in:

1 ½ Cups (320g) raisins
For 4 dozen use #40 disher
For 3 ½ dozen cookies: drop 2 tablespoons (#30 disher) dough about 1.5 inches apart on baking sheet (cover baking sheet with parchment paper) and bake for 10-12 minutes (look for lightly browned edges)
For 2 dozen cookies: drop 3 tablespoons (#20 disher) 2 inches apart and bake for 12-15 minutes (look for lightly browned edges)
