Cashew Ranch Dressing

   Yields about 2 cups ranch dip or about 4 cups ranch dressing

   1 cup raw cashews, soaked in water for 2 hours and then drained


   ¼ cup fresh lemon juice

   
¼ cup apple cider vinegar


   3 dates soaked in 1/2 cups water (or 25g chopped dated)

   2 – 4 large cloves garlic


   1 medium onion
 coarsely chopped

   1 teaspoon Mustard powder (or Dijon Mustard)

   1/4 teaspoon cayenne or chipotle powder

   1/2 teaspoon salt

 

   Fresh herbs (choose 2 or 3)

   1 tablespoon fresh continental parsley chopped finely

   
½ teaspoon fresh dill chopped finely


   1 tablespoon green onions chopped finely

   1 tablespoon cilantro chopped finely

   

 

   Place all ingredients except the fresh herbs into your blender and puree adding water to get desired consistency.

   Add the herbs and pulse 1 or 2 times.
