Toast with Bananas, Peaches and Strawberries

Toast with Bananas, Peaches, and Strawberries

So I faced a dilemma on the Presto Diet: I love bread, and I learned to make 100% whole grain breads, but I couldn’t put butter, jelly, or cheese on the bread. One day I noticed we had some extra ripe bananas. They were so ripe, that you could spread them on the toast. and boy did they taste good. When the bananas are that ripe, they taste buttery and sweet.

Then in then late summer, when the peaches are in season, I started adding sliced peaches to the toast. they were very good too. and one time, on a whim, I added strawberries…

Now that was good. almost like there was butter and strawberry jam on the toast. Unfortunately, most of the year we can’t get good peaches. So we top our toast with bananas and whatever fresh berries taste the best. you do have to mash the raspberries and the blueberries so they don’t go rolling off every time you pick up your toast to take a bite.
