3 day with all 40% rye in starter. Hydration: 80%
Day 1

Pinch of starter (5-10g)

100g rye

150g water

Day 2

300g rye

150g water

Day 3

500g water

600g Bread Flour

Autolyse

5g yeast

25g caraway seed

5g anise seed

20g salt

Hot out of the oven!
